Recipe:

  • 2*1.5kilo Free Range Chickens
  • 125ml Light Olive Oil
  • 1 bunch Spring Onions
  • 100ml Lemon Juice
  • 1″ 2.5cm fresh ginger
  • 4 Garlic cloves
  • 4 tablespoons chopped fresh Parsley
  • 6 tablespoons Barbecue Sauce
  • 1 teaspoon Sea Salt
  • 1 teaspoon freshly ground Black Pepper
  • 1 tablespoon Sweet Paprika
  • 1 teaspoon ground coriander
  • 125gm melted Butter

Recipe:

  • 16 hot red chillies – Piri Piri Chillies, Serrano, Cayenne, Tabasco
  • 2 teaspoons Sea Salt
  • 100ml red wine vinegar
  • 175ml light olive oil
  • 200gm Chopped Tinned Tomatoes
  • 4 garlic cloves
  • 1 lime
  • 2.5cm Fresh Ginger
  • 1 tablespoon sugar
  • 1 handful fresh coriander
  • 1/2 red onion

Recipe:

  • 4 Scotch fillet steaks, 25 mm thick
  • ¼ cup mixed herb butter, made by combining a full cup of butter with 4 teaspoons of finely chopped onion, ½ cup fresh chopped herbs and four teaspoons of lemon juice (refrigerate what you don’t use)
  • freshly ground black pepper

For The Stuffing:

  • 4 teaspoons butter
  • 2 small onions, chopped
  • 200 g mushroom, finely sliced
  • 24 smoked oysters (or mussels)
  • 2 teaspoons lemon juice
  • 4 tablespoons cream
  • freshly ground black pepper

Recipe:

  • 6 chicken pieces
  • 1 onion sliced into rings
  • 3 large potatoes, peeled and sliced
  • 2 tomatoes, sliced
  • 150 g mushrooms, sliced
  • 1 green pepper cut into chunky pieces
  • 2 teaspoons salt
  • freshly ground black pepper
  • 3 tablespoons butter

Recipe:

  1. In a large bowl, stir together the garlic, olive oil, tomato sauce, and red wine vinegar. Season with basil, salt, and cayenne pepper. Add shrimp to the bowl, and stir until evenly coated. Cover, and refrigerate for 30 minutes to 1 hour, stirring once or twice.
  2. Preheat grill for medium heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
  3. Lightly oil grill grate. Cook shrimp on preheated grill for 2 to 3 minutes per side, or until opaque.
