Recipe:

  • 1 gallon cold water
  • 3/4 cup kosher salt
  • 1/3 cup light brown sugar, firmly packed
  • 1 whole chicken, cut into 6-8 pieces
  • Freshly ground black pepper
  • Vegetable oil, for the grill
  • Mama’s Barbecue Sauce, warmed

Sauce Recipe:

  • 1 cup (2 sticks) unsalted butter
  • 1 onion, preferably Vidalia, very finely chopped
  • 2 1/2 cups ketchup
  • 2 cups apple cider or distilled white vinegar
  • 1/2 cup Worcestershire sauce
  • 1/4 cup Dijon mustard
  • 2 tablespoons firmly packed brown sugar
  • Juice of 2 lemons
  • 2 tablespoons freshly ground black pepper
  • Coarse salt
