  • rack of pork ribs

  • 150ml tomato ketchup
  • 100ml cider
  • 3 tbs cider vinegar
  • 2 tbs dark brown sugar
  • 1 tbs soy sauce
  • 1 tsp English mustard
  • 1 tsp fennel seeds ground
  • 1/2 tsp chilli flakes ground
  • black pepper
  • 1/2 red cabbage shredded
  • 1 small red onion very finely sliced
  • 1 carrots grated
  • 1 apples grated
  • 1/2 green chilli finely diced
  • 2 tbs flat leaf parsley chopped
  • 5 tbs mayonnaise
  • juice 1/2 lemon
  • 1tsp sugar
  • salt and pepper
