  • 2 scotch bonnet peppers
  • 1/3 cup soy sauce
  • 2 tablespoon vegetable oil
  • 1/4 cup vinegar
  • 1 onion
  • 1/2 cup orange juice
  • 2 cloves garlic
  • 1 teaspoon grated ginger
  • 1 boneless pork loin (about 7-8lbs)
  • 2 cups of the jerk marinade
